Foodie Friday: No-Bake Macaroni & Cheese

I absolutely love this recipe for no-bake macaroni & cheese! (Let's be honest, though; I love anything that's cheesy.)

Ingredients:
1 package whole wheat elbow noodles
10-oz package frozen broccoli florets
1 3/4 cups skim milk, divided
3 tablespoons flour
1/2 teaspoon garlic powder
3/4 cup shredded, extra-sharp Cheddar cheese
1/4 cup shredded Parmesan cheese
1 teaspoon Dijon mustard

Directions:
1. Bring a large pot of water to a boil. Cook pasta for 4 minutes. Add frozen broccoli and continue cooking, stirring occasionally, until the pasta and broccoli are just tender, 4 to 5 minutes more.
 
2. Meanwhile, heat 1 1/2 cups milk in another large pot over medium-high heat until just simmering. Whisk the remaining 1/4 cup milk, flour, garlic powder, salt and pepper in a small bowl until combined. Add the flour mixture to the simmering milk; return to a simmer and cook, whisking constantly, until the mixture is thickened, 2 to 3 minutes. Remove from the heat and whisk in Cheddar, Parmesan and mustard until the cheese is melted.
 
3.Drain the pasta and broccoli and add to the cheese sauce. Return to the heat and cook, stirring, over medium-low heat, until heated through, about 1 minute.

Spencer-Peirce-Little Farm

Last weekend, B & I spent a couple of hours at the Spencer-Peirce-Little Farm. It's a Colonial farm, located on 230 acres of land, which is now open to the public as a museum. Nature walks, events, and lectures are also held at the Farm throughout the year. 

B and I didn't visit the museum, but we spent some time walking around the grounds and fell in love with the gorgeous farm house - circa 1690! P9230064 P9230066 P9230071 P9230077 P9230078 P9230116 P9230124 P9230112 Best of all, the Spencer-Peirce-Little Farm also fosters farm animals, many of whom were previously abused or neglected, in partnership with the Massachusetts Society for the Prevention of Cruelty to Animals. As you probably already know, I'm a huge animal lover and proponent of animal rights, so it warmed my heart to see these animals so happy and well taken care of now. One of the employees approached us and said she was surprised Amos was being so friendly because he had been badly abused before coming to the farm, and he's "very choosy" when it comes to people. Obviously Amos could sense that we're cat lovers. P9230133 P9230130 The Spencer-Peirce-Little Farm is one of those places I can see us returning to again and again. Next time, I hope we'll be able to enjoy the museum! If you're in the area, you should definitely visit too.

I never would have been bold enough to color-block with bright oranges & blues if it weren't for this awesome scarf and its unique color palette.

It's so easy to find inspiration for outfits - magazines, fashion blogs, Pinterest, etc. - but I love being inspired by pieces I already own. It helps me to appreciate what I have in my own wardrobe and to cut back on shopping & spending - something I'm perpetually working on.

Smolak Farms

For the second stop on our New England farm tour, B and I went to Smolak Farms in North Andover, MA. My dear friend Jasmine came along too; she's the only person I know who loves animals and fall-themed activities as much as I do.

For the occasion, I wore one of my favorite fall floral tops, a warm, chunky cardigan, shorts, tights, and ankle boots - practically my fall uniform.

Not surprisingly, we spent much of our afternoon at Smolak Farms looking at the animals. There are llamas, alpacas, various fowl, deer, goats, zebu, and more - and they're all so cute!

Smolak Farms has pick-your-own apples. Unfortunately, we didn't arrive early enough to pick, but we did enjoy some of Smolak's apples in the form of their delicious apple cider donuts. Okay, you caught me, I had frozen yogurt too. What a combination!

I'm not necessarily proud of this fact, but I don't re-wear items of clothing very often. I'm working on changing that - really, I am - because there's no reason not to re-wear the things that I love. But there are a few pieces I wear over and over again, including this denim jacket and button-down. I can promise you'll be seeing more of them this fall!

I know some of you are still mourning the loss of summer, but I'm loving this cool fall weather and the fact that I can finally pull all of my jackets & blazers out of storage. I thrifted quite a few great new ones over the summer, and I can't wait to wear them now that it's cool enough to do so.
