Huevos con SOYrizo

I love Mexican food, and back when I was an omnivore, huevos con chorizo was one of my favorite Mexican dishes. I was pleasantly surprised to discover soyrizo at the grocery store last week, which is flavored like the spicy Mexican sausage but, of course, isn't sausage. I can honestly say I prefer the taste and texture of this soyrizo to actual chorizo, and I highly recommend this recipe, even for meat-lovers!

Here's what you'll need:
Soyrizo
Eggs
Soft tortilla shells
Shredded cheese
Milk (optional)
(Amounts vary depending on number of people. B and I used one "tube" of soyrizo and four eggs.)

Here's what you'll do:
1. "Brown" soyrizo in a skillet over high heat for a couple minutes, and set soyrizo aside
2. Scramble eggs (using a little milk) in the same skillet
3. Add soyrizo back to eggs and cook for another minute or two
4. Portion mixture into the tortillas and add cheese

If you want, you can also add lettuce and tomato to the tortillas and serve with refried beans and rice. Yum!

  1. I'm so going to try this - I try to be vegan but I still eat eggs from time to time and I'm sure I can substitute soy cheese...this sounds/looks yummy!
